I know it’s been a LONG time since I posted, so I’m making this post a priority right now. Although I won’t lie that life is pretty hectic and I don’t have much time to write. We’re getting closer and closer to the wedding!; but that means it’s taking up more and more of my time. I’m also attempting to take 2 more of my licensing exams by the end of March - so unfortunately blogging has taken a little bit of a back seat, temporarily!
I know what you’re thinking: oh man, no story about how Christine used to eat this as a kid?? No sorry, I’m sparing you today. Which just means we’ll get right into the food faster. I think that’s ok because food is ultimately what you came here for.
The ONE thing I will say though is that this breakfast tastes like you’re doing something bad, is totally diet friendly, and my coworker asked me if I was eating ice cream for breakfast. Okay, that may have been me trying to shove three things to say in one sentence. Enjoy this totally healthy 250 calorie (chocolate) breakfast or hey, dessert! Hope to post again soon!
Velvet Chocolate Overnight Oats
Ingredients
- 2 cups oats
- 2 tbsp chia seeds
- 2 tbsp cocoa powder unsweetened
- 2 tbsp honey
- 1 tbsp vanilla extract
- 1 single serve nonfat vanilla Greek yogurt 6 oz
- 2 cups nonfat milk can replace for any milk you drink
Instructions

In a medium bowl combine oats, chia seeds, and cocoa powder.

In a separate small bowl combine honey and vanilla extract. Pour the honey mixture into the oats and combine.

Mix in the yogurt and milk and blend together. This will be soupy for now. Chill in the refrigerator overnight.

The oats are ready to eat when all the liquid has been absorbed and had thickened. Serve cold and add top with a spoonful of yogurt or anything you like!
