This Fresh Salmon Sandwich with Creamy Dill Sauce and crisp greens works perfectly as an easy seafood weeknight dinner or a light and laid-back weekend meal for summer vibes no matter the time of year.
Nothing brings on fresh foods like hot weather. The desire to be outside ALL the time is strong – and so is the need to turn on the oven for shorter periods and stand in front of a burner less. That’s why on the weekends when the weather is warm, I love making dinners on the grill. This salmon sandwich can be done both in your oven or on the grill if you really don’t want to be indoors.
What I also love when the weather gets warm is seafood. My long island upbringing definitely gives some nostalgia for this association. Clamming, cracking open fresh steamed crabs on a picnic table, fresh pot of steamers, fried calamari, white wine mussels, baked clams, coconut shrimp, blackened fish…. I think I’ll stop here because I’m getting hungry.
Though I’m an avid seafood eater, I didn’t start liking fish until I was in high school. And the only fish I ate was salmon and the only way I ate it was when my mom would wrap it in phyllo dough and stuff it with sautéed mushrooms and spinach. You might have seen the recipe on my Instagram account if you follow me there – if not you totally should be!
This somehow developed right into a love for sushi? I went from being quite picky about fish to the other extreme of like, ok I’ll just eat it raw. My horizons have since expanded to fill in the gap, although I am still hesitant to try meatier fish, like tuna steak. I’m getting there though!
Benefits of salmon
Its probably a good thing that salmon was the first fish I started to like because of all the health benefits it touts. It’s extremely rich in omega-3 fatty acids and is one of the best sources of them you can eat. Its also a great source of protein that’s loaded with B vitamins, potassium, and selenium. Since it's packed with all of these nutrients, the benefits of eating salmon include lower blood pressure, sharpen memory, repair muscles, regulate hormones/metabolism, anti-inflammatory, healthier skin, and lubricates joints. These benefits can mostly be attributed to the high amount of quality fatty acids in the fish. Healthy fats in your diet help to transport & absorb vitamins, produce higher quality hormones, and more.
This recipe
Onto the food! What I like about this Fresh Salmon Sandwich with Creamy Dill Sauce so much is that it just tastes really really fresh. From the cold dill sauce and greens to the creamy cold avocado, it just feels like you should be eating this outside at a picnic on a really nice day. But if you’re not in some idyllic world, this works really well for a healthy, quick, and easy weeknight dinner, in under 20 minutes I might add.
Fresh Salmon Sandwich with Creamy Dill Sauce
Ingredients
- 2 rolls
- 2 6 oz fillets of salmon
- Salt and pepper to taste
- Olive oil drizzle
- 2 garlic cloves minced
- ⅓ cup roughly chopped fresh dill
- 1 lemon
- ¼ cup light mayo
- ½ avocado sliced
- 2 kirby cucumbers sliced thin
- ½ cup arugula
Instructions

Preheat oven to 400 degrees. Season salmon fillets with salt and pepper, drizzle of olive oil each, minced garlic cloves, a sprinkle of the fresh dill, and a fresh squeeze of a ¼ lemon. Bake for 15 minutes

While the salmon cooks, mix together the remaining dill, mayo, squeeze of ½ lemon juice, salt & pepper to taste in a bowl.

Spread the mayo on both sides of the bread. Lay the cucumber slices down on the bottom buns.

When the salmon is done, place on the buns. Add the avocado slices, arugula, and another squeeze of lemon on top.
