Pork with Caramelized Shallot & Cherry Sauce is an easy pan-sauce that comes together in minutes. Cherry jam melts together with butter and sauteed shallots to compliment pork chops or tenderloin.

Cherries are not my favorite fruit because of how tart they are. However, this sauce comes together and the cherries take on a whole new flavor that I didn’t know existed. Against caramelized salty pork, the cherry sauce is actually the star of this dish.
I’m having a moment with this Pork with Caramelized Shallot & Cherry Sauce right now and have been making it weekly this month. The great thing about it is that it’s totally healthy and something you can eat without any guilt. I thought this recipe was going to be enough for only two people, but I was wrong - it’s plenty for four!
It starts by bringing boneless pork chops to room temperature and season on both sides with salt and pepper. Preheat the oven to 400. Heat a skillet on medium heat on the stove and drizzle some olive oil in the pan.
Sear both sides for about 3 minutes each side to brown. Remove from pan and continue cooking in the oven for about 6-8 minutes.
In the skillet, sauté minced shallot until caramelized. Add in 2 tbsp water, 4 tbsp cherry preserves, salt & pepper, and a pinch of sugar. Bring this to a simmer and then lower the heat. When the sauce has thickened, turn the heat off and mix in the butter. The butter adds in just a little bit of creaminess and makes the whole sauce taste more smooth and rich.
While the sauce is finishing, take the pork out and let it rest for a few minutes. Slice the pork and serve with the sauce spooned over the top. Mashed potatoes go really well with this - or you can also do mashed cauliflower! Also pictured in the photos are these roasted brussels sprouts - my fav!

- 4 tbsp cherry preserves
- Pinch of sugar
- 1 tbsp unsalted butter
