BROWN SUGAR GLAZED SALMON

Ingredients
Fish & Marinade:
  • ½ lb salmon
  • cup Brown sugar
  • 2 tbsp Soy sauce
  • 1 tbsp Olive oil
  • ½ tsp Garlic powder
  • Salt to taste
  • Pepper to taste
Cauliflower:
  • 1 head of cauliflower
  • 1 ½ cups water
  • ¼ cup milk
  • 2 tbsp Butter
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • ½ tsp dried parsley
Instructions
  1. Preheat the oven to 400
  2. Start by bringing the fish to room temp. Salt and pepper to taste.
  3. Prep the cauliflower by cutting the stems off and chop the rest into small chunks. Boil in water with a little bit of salt for 15 minutes.
  4. For the marinade, mix the brown sugar, olive oil, pepper, soy sauce, and garlic powder until it forms a paste.
  5. Coat marinade onto the salmon. Bake for 15 min at 400.
  6. Start to break up the larger pieces of the cauliflower with a potato masher or the back of a large fork. When most of the water has evaporated, mix in milk, butter, salt, ground pepper, garlic powder, and dried parsley. Keep this going on a low heat until the consistency has thickened.
