Servings: 4
Ingredients
  • 1 pound ground turkey
  • cup finely chopped scallions
  • 3 tablespoons finely chopped parsley
  • Salt and pepper to taste
  • Flour for dredging
  • 2 eggs beaten
  • Hot sauce
  • 1 ½ cups cornflakes crushed
  • Cooking spray
  • 4 sandwich rolls
  • BBQ sauce
  • Toppings: shredded cabbage lettuce, diced tomatoes, diced raw onion, chopped pickles
Instructions
  1. Preheat oven to 375
  2. In a large bowl, mix together the turkey, scallions, parsley, and salt & pepper with your hands. Form four patties.
  3. Add a few dashes of hot sauce into the beaten eggs (depending on how hot you want it). Dredge the patties in the flour, then into the egg mixture, and finally into the crushed cornflakes.
  4. Place them on a baking rack set in a baking sheet. Spray them generously with cooking spray.
  5. Bake for 15 minutes and for the last 5 minutes turn your broiler on high to really get the outsides brown.
  6. When finished, place them on the rolls and top with BBQ sauce and other toppings.
