Pork with Caramelized Shallot & Cherry Sauce

Ingredients
  • 1 tbsp olive oil
  • 1 lb of boneless pork chop
  • Salt & pepper to taste
  • 1 shallot minced
  • 2 tbsp water
  • 4 tbsp cherry preserves
  • Pinch of sugar
  • 1 tbsp unsalted butter
Instructions
  1. Bring the boneless pork chops to room temperature and season on both sides with salt and pepper. Preheat the oven to 400.
  2. Heat a skillet on medium heat on the stove and drizzle some olive oil in the pan.
  3. Sear pork chops on both sides about 3 minutes each side to brown. Remove from pan and continue cooking in the oven for about 6-8 minutes.
  4. In the skillet, sauté minced shallot until caramelized. Add in 2 tbsp water, 4 tbsp cherry preserves, salt & pepper, and a pinch of sugar. Bring this to a simmer and then lower the heat. When the sauce has thickened, turn the heat off and mix in the butter.
