Ingredients
  • 1 ½ pounds chicken breast
  • 1 tsp sea salt
  • 1 tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp poultry seasoning
  • Juice from ½ lemon
  • ¼ cup chopped walnuts
  • ¾ cup celery
  • cup diced red onion
  • 1 tbsp fresh minced dill
  • cup dried cranberries
  • 1 ½ cup light mayo
  • 1 tbsp Dijon mustard
Instructions
  1. Preheat the oven to 375.
  2. Start by patting the chicken breasts dry with a paper towel. In a small bowl, mix together the dried seasoning blend of sea salt, pepper, garlic powder, oregano, and poultry seasoning. Stir it all together.
  3. Squeeze the lemon juice all over the chicken, then sprinkle the seasoning blend all over the chicken making sure it’s all covered.
  4. Place the chicken breasts in a baking dish and bake for about 20 minutes or until juices run clear?
  5. OPTIONAL: Toast the walnuts on a baking sheet in the oven for 5 minutes.
  6. Allow the cooked chicken breasts to cool. Once its cooled, put the chicken breasts in a large bowl. Then you’ll take two forks and shred it into medium sized pieces.
  7. While the chicken is cooking and cooling, dice up all your ingredients if you didn’t already – celery, red onion, walnuts, and dill.
  8. After the chicken is all shredded, add in the diced ingredients, plus the dried cranberries to the large bowl. Then finally mix this all together with the mayonnaise, Dijon, and the fresh minced dill.
  9. Allow it to chill for at least an hour so that it all has time to chill and come together.
