Preheat oven to 425. Roll the pie crust out onto the pan. In a small bowl, mix together sugar and cinnamon. Sprinkle 1 tbsp of this cinnamon sugar onto the crust.

Arrange the apple slices around the pie crust in a radiating pattern, starting from the outer edge. Sprinkle the remaining cinnamon sugar on top of the apples.

Bake for 30 minutes. In a small bowl, mix honey or jam with vanilla extract and brush it on top of tart when its finished.
