Poke the potatoes all over with a fork and microwave for 4 minutes to soften.

While the potatoes are cooking, small dice the onion and peel and dice the peaches.

When the potatoes are done, cut them into small-medium sized chunks. Heat a large skillet on medium heat. Add a drizzle of olive oil.

To the hot pan, add in the sweet potatoes. Let them cook for 5 minutes, stir often. Next add in the onion and peaches. Season with salt, pepper, cinnamon, and another drizzle of olive oil. Stir to combine. Cook everything together for another 5 minutes or until the potatoes are cooked through.
