Ingredients
Filling
  • 6 peaches peeled and sliced
  • ¼ cup brown sugar
  • 1 tsp cinnamon
Topping
  • 1 cup flour
  • ¾ cup raw sugar white is fine too
  • 2 tsp baking powder
  • Pinch of Salt
  • ¾ cup skim milk
  • ½ tsp lemon zest
  • 4 tbsp butter
Instructions
  1. Preheat the oven to 350. In a medium bowl, mix together the peaches, sugar, and cinnamon. Put this in the refrigerator to chill for 30 minutes, so the peaches can absorb the sugar.
  2. In a medium bowl, mix together the flour, sugar, baking powder, and salt. Slowly mix in the milk while stirring at the same time. Mix in the lemon zest.
  3. In an 8x8 pan, drop the tablespoons of butter & put into the oven for a couple minutes until fully melted. Take out of the oven and fold in the batter. 

  4. Swirl the butter into the batter slightly, it does not need to be fully mixed. Dump the peach mixture right on top of this. Bake for 20-30 minutes. 

  5. Let cool for a bit to set, but serve hot by itself or topped with ice cream or whipped cream.
